A small cutting cake as the top tier allows you to cut your wedding cake and the individual cakes can be easily handed out to your guests or packaged in favour boxes for them to take home.
My butter-based fruit cakes with brandy soaked fruit, are made three months in advance to allow the cake to mature. It is then covered with the best marzipan and then coated in Fondant Regalice for a beautiful smooth finish.
